  • 4 Chocolate twists120 g
  • 4 Shortcrust pastry tart 
  • 80 g Custard
  • 20 g Icing Sugar
  • 80 g Fresh fruit
  • Fresh mint and flowers

  • Prove the twists for 1 hour and 30 minutes. Temperature 28 degrees, Humidity 80%
  • Roll up the twists, creating a nest. 
  • Insert it into a ring. Height 2 cm, Width 10 cm
  • Spray the surface with egg
  • Cook at 165 degrees for 17/19 minutes, valve open
  • Cool for 15 minutes
  • Sprinkle with powdered sugar
  • Fill a shortcrust pastry tart with custard and place it in the center of the nest
  • Garnish with fresh fruit, edible flowers and  an aromatic mint leaf
