- 4 Chocolate twists120 g
- 4 Shortcrust pastry tart
- 80 g Custard
- 20 g Icing Sugar
- 80 g Fresh fruit
- Fresh mint and flowers
Fasi della preparazione
- Prove the twists for 1 hour and 30 minutes. Temperature 28 degrees, Humidity 80%
- Roll up the twists, creating a nest.
- Insert it into a ring. Height 2 cm, Width 10 cm
- Spray the surface with egg
- Cook at 165 degrees for 17/19 minutes, valve open
- Cool for 15 minutes
- Sprinkle with powdered sugar
- Fill a shortcrust pastry tart with custard and place it in the center of the nest
- Garnish with fresh fruit, edible flowers and an aromatic mint leaf
